Mid Year Favorites 2016

It's that time of year again! Favorites time! Like everyone else, I can't believe half the year has passed already. It's such a cliche but time does really move so fast! Below are a few things that I have been enjoying these past 6 months.  Naked Nibbles Coconut Bliss - these little nibble balls are made of dates and raisins flavored with coconut. They are a great snack and they come in a variety of flavors, but coconut is definitely my favorite so far. They are glutenfree, which is a necessity for me, and dairy free too. It’s a great alternative to more unhealthy snacks, and a life saver in situations where glutenfree foods are not available. I usually keep a bag of these with me whenever I go somewhere, where I am not sure of the selection of food. Going gluten-free (and a yummy muffin recipe)!

I have talked a few times on this blog about being gluten-intolerant, but I have never really explained what that entails and how I found out about it. About a year and a half ago I started feeling sick whenever I ate. In hindsight this makes sense, because I pretty much ate some form of gluten for every meal. Finally, I told my mom about my troubles. She is a sort of nurse and I almost always consult her before I go to the doctor. She told me it sounded like IBS, and I went home and googled that. And became very downhearted, because IBS means Irritable Bowel Syndrome (or something) and it pretty much means you are allergic to 90% of foods*. Gluten and lactose being on top of the list. But I was feeling worse with every meal, so I decided to give the diet plan a go and cut out gluten and lactose and all sorts of vegetables. Iceland Review

I recently got back from a week long trip to Iceland. If you saw my Iceland packing list that I posted some weeks ago, I have a few comments on that! First of all: skip the dress, the shorts and the skirts! I never used any of it. I probably could have used the dress and the skirts, if I had had enough leggings, leg warmers and cardigans to complement those outfits and keep me warm. But alas, I was sadly delusional about the Icelandic weather. I ended up using a fleecy jumper that I packed last minute the most! All my t-shirts and tank tops were layered to keep me warm and I had to make good use of the few long-sleeved shirts I had brought. To be fair the weather was not SO bad, I had just packed for a holiday in the sun, rather than cloudy with a chance of rain… The Keflavik airport is quite easy to navigate on landing, and there is a bus that will take you to town in about an hour.
